Egg Salad Sandwich

Yields: 6 sandwiches

Ingredients:
  • 12 slices thinly sliced white bread crusts removed
  • 1 tbsp sour cream
  • 3-4 tbsp Mayonnaise
  • 1/4 cup chopped cucumber
  • 3 tbsp chopped chives
  • salt & pepper to taste
  • chive flower for garnish
  • 6 hard boiled eggs
Using a flower-shaped cookie cutter, cut 12 flowers from bread slices. For greater interest, use several different sized and/or shaped cutters. Spread the bread thinly with some mayonnaise.

In a bowl, chop hard-cooked eggs. Stir in 2 to 3 tbsp. of mayonnaise and sour cream. Fold in cucumber and chives. Season to taste with salt and pepper.

Spread bread shapes with egg mixture. Arrange individual chive blossoms in a circle in the center of each sandwich to resemble a flower.
